On September 25th...

I will arrive here...

and begin relaxing here...

and going to see this...

Yep! That's right! We are going to Phoenix, AZ again!!! Matt has another conference with work, so I am going to tag along and we are also going to make it an early anniversary trip! This worked out for us too for our first anniversary. We stayed at this fabulous resort called the Wigwam Resort. It was a very neat and unique resort. This time we are staying at the JW Desert Ridge, AND this time we are going to see one of the 7 wonders of the world, The Grand Canyon!!! (last time we didn't make it). I am super excited about this trip. It came with great timing! (a month early, but that's ok=)

On July 25, 2009, we attended our good friends, Greg and Karen's Wedding! It was in Columbus, TX, was beautiful, AND alot of FuN!!!

The Lovely couple!

Beautiful and very classy Bride's cake

Greg's cake is a river, Greg and Karen met at Michael's riverhouse, (aka the "loveshack,") a few years back for the annual float and it has been love ever since!!! Other couples have met there too, and later married, like Brad and Gin!)

Happy 4th of July!!!

Hope everyone had a Happy 4th! This is the dish I made to take to our festivities, called corn salsa!! Thought I would share this with y'all, BELIEVE ME... it's YUM, healthy, colorful, AND best of all... lactose free for me, (and also vegan)!

Here's what you need:
(and you can sub and alter things as you wish, you can't really mess it up!)

2 cups Mexicorn drained
1 can black beans rinsed and drained
1 jalapeno chopped (most seeds out)
1/2 cup chopped red bell pepper
1/2 cup chopped fresh cilantro
1/4 cup chopped red onion (or less depending on your liking, it adds great flavor though)
3 tablespoons lime juice
2 tablespoons balsamic vinegar
salt and pepper to taste

Combine all ingredients, cover and refrigerate a few hours, serve chilled.

I eat this with Triscuit olive oil and cracked black pepper crackers, also works well with Scoops chips. Enjoy!!
