Belize...the FOOD

Oh boy did we eat in Belize. You sweat so much, and we stayed so active, I ate whatever I wanted and actually lost TWO pounds while there! Crazy right? So, if you want to loose weight, while on vacay, I suggest you go to Belize=) 

We ate breakfast in our room each morning, and were out for lunch most days with excursions, and then went out every night for dinner.

we didn't take the good camera out for dinners, but we did get dressed up and go, but few pics to show for it, so I got these couple of the restaurants online...=) Above is blue water grille, and below is Elvi's Kitchen. I loved getting the coconut shrimp everywhere we went...we also ate A LOT of snapper!

Happy 2nd Birthday Cate Elisabeth! We love you so much!

We had a Monday FUNday!

A few weeks ago I took Cate to the Austin Children's Museum for the Baby Bloomers club.  It's Monday mornings from 9-12, only open to ages under three, and they have story time, singing, and craft time, along with unlimited play at all the exhibits....endless fun! 

Cate had a BLAST!

And now that dada works down town, we got to meet him for lunch!

A sweet day

Yesterday we had a "sweet" day. Pops (my dad) came to visit, and there lots of sweetness involved. We went to the mall, let Cate run, ride the carousel's, get M&M's out of the germy candy machines, and then we had ice cream AND jamba juice, WOW!

While Cate napped, Pops treated mama to get her hair done!!! Such a sweet surprise=) 

See...I told you it was a day of sweetness.

Belizean Birthday...snorkeling

On our first full day in Belize, we 

took a catamaran sail and snorkel, all day tour. We sailed, snorkeled, sailed to Caye Caulker, ate lunch, then snorkeled with sharks, and sailed back.

 Are we in Hawaii again?!?! No, but there was a guy roasting this pig for dinner for his restaurant!

 Oh my word!

 I was a little nervous...but I did it!!

We bought an underwater camera when we stopped in Caye Caulker. We didn't have one on our first snorkel stop, and there of course, we saw the best fish, and even a sea turtle that came SOO close to us...bummer. So we bought one so we didn't miss out on the sharks and rays...

Fact: Belize is known for its 180 mile barrier reef that stretches the length of the country, very very popular for divers, and snorkelers. 

We didn't really know about the reef until we got there. (I didn't really do a lot of research, just knew of several friends and friends of friends that went there and had a great time=) 

 We just wanted a caribbean vacay=) Pretty beaches and sailing and snorkeling were a huge plus!=)

Belizean Birthday, part 1

We decided to celebrate my 29th in Belize...

I got to co-pilot the puddle hopper...

We did lots of snorkeling, went to the Lamanai ruins, rode bikes on the beach...and more snorkeling...

It was just gorgeous!!! I told Matt while we were sailing on the catamaran that I hope heaven has caribbean oceans and catamarans...ahhhhh! That is my happy place...
